Restaurant Manager – New Opening
- Location: Bistro, Kingly Court, Soho, London
- Department: Management
- Reporting to: General Manager, Operations Director
- Contract: Full-Time
About Us
From the team behind Cocotte comes Bistro — an exciting, brand-new modern French bistro and wine bar opening its doors in the heart of Soho’s Kingly Court. Moving beyond rotisserie roots into a fresh chapter of produce-led, generous cooking and low-intervention wines, we are building a concept centred entirely on stellar food, curated wine, and world-class hospitality. We are looking for an ambitious, hands-on Restaurant Manager to help launch and shape this landmark opening from day one.
The Role
As the Restaurant Manager, you will work hand-in-hand with the General Manager to establish service foundations, build and mentor a high-performing floor team, and drive operational excellence. You will act as the ultimate host during service, blending neighborhood warmth with sharp execution, ensuring Bistro becomes one of Soho’s most talked-about dining destinations.
Key Responsibilities
- New Opening Execution: Support the GM in launching the restaurant, setting up operational workflows, establishing service standards, and building an inclusive, high-energy workplace culture from scratch.
- Operations & Floor Leadership: Oversee day-to-day front-of-house and back-of-house coordination, stepping up to run the floor and ensure seamless, world-class service during every shift.
- People Leadership & Development: Hire, train, and mentor new team members, instilling professional discipline, strong work ethics, and a passion for French bistro culture.
- Financial & Stock Diligence: Assist with department budgets, cost controls, stock management, weekly reporting, and supplier relationships.
- Guest Relations & Community: Act as the face of the business, creating memorable guest experiences, handling feedback gracefully, and managing relationships with local regulars, VIPs, and media.
- Cross-Department Communication: Maintain transparent, open communication channels with the kitchen team regarding daily specials, menu updates, and pace of service.
What We Are Looking For
- Proven experience as an Restaurant Manager or senior floor manager, ideally within a fast-paced, high-quality bistro, restaurant, or wine bar environment.
- A natural leader with a passion for coaching, developing people, and leading from the front.
- Strong knowledge of modern food trends, classic hospitality, and a keen appreciation for wine.
- Solid business acumen, comfortable with cost controls, stock ordering, and operational reporting.
- High adaptability, resilience, and a hands-on “start-up/new opening” mentality.
- Exceptional interpersonal and communication skills.
What We Offer
- The rare and exciting opportunity to be part of a major new hospitality launch in central London.
- A world-class work environment focused on care, compassion, and career growth.
- Competitive salary package and performance incentives.
