Help bring a brand-new Italian dining destination to life!

We’re opening Terracotta, our own authentic Italian kitchen, at the heart of Waterloo Station in Q4 2026, and we’re looking for an enthusiastic and ambitious Assistant Manager to join us from the very beginning.

This is an exciting opportunity to play a key role in launching a new restaurant and shaping its success. Working closely with the Store Manager, you’ll help lead the team, deliver exceptional service and create the warm, vibrant hospitality experience that Terracotta is all about.

Inspired by the rich flavours, traditions and energy of Italy, Terracotta is focused on great food, welcoming service and memorable guest experiences. As Assistant Manager, you’ll be at the heart of the operation, supporting the day-to-day running of the restaurant, maintaining high standards and helping to create a positive, high-performing team culture.

Whether you’re leading a busy service, supporting and developing team members, engaging with guests, or making sure the restaurant looks and feels its best, you’ll play an essential part in establishing Terracotta as one of Waterloo’s most exciting new dining destinations.

Main Duties:

• Support the Store Manager with the day-to-day running of the restaurant, ensuring smooth and efficient operations and consistently high standards.
• Lead, motivate and support the team throughout service, creating a positive, energetic and collaborative working environment.
• Deliver an exceptional guest experience, ensuring every customer receives warm, welcoming and attentive service.
• Maintain high standards across service, cleanliness, presentation and overall restaurant appearance.
• Support with stock management, operational administration and the smooth running of shifts.
• Ensure all Food Safety, Health & Safety and operational procedures are followed consistently.
• Coach, train and develop team members, helping them build their skills, knowledge and confidence.
• Lead by example, remaining hands-on and visible during busy services and supporting wherever needed.

The Right Candidate Will:

• Have previous experience in a management role within a fast-paced restaurant, hospitality or food & beverage environment.
• Be passionate about hospitality and delivering memorable guest experiences.
• Be a confident, hands-on leader who enjoys motivating, supporting and developing others.
• Thrive in a fast-paced environment and remain calm, organised and positive during busy periods.
• Demonstrate strong communication, organisation and problem-solving skills.
• Have a good understanding of Food Safety, Health & Safety and operational standards.
