About us

Corrochio’s is a Mexican restaurant and bar in the heart of Dalston, open since 2021. Upstairs is our restaurant and terrace, serving food we’re proud of: prawn tacos, beef rib, black bean dip and plenty more.

Downstairs are our two bars. Cantina is a buzzy Mexican bar with DJs until 2am on Fridays and Saturdays. Cinco is our speakeasy-style cocktail and agave bar, and it’s the fastest-growing part of the business.

Our guests keep telling us the same thing: friendly, knowledgeable staff, authentic food and great margaritas. We want to build on that.

Why now

We have a vision and a clear plan. Over the past few months we have been putting proper systems in place, building a stronger team and shaping a development plan for the business. Corrochio’s is going to grow significantly, and we want the person in this role to grow with it.

To be honest with you, we’re not looking for someone who just wants a job. We’re looking for someone who wants to learn, build things and go further, and who will see this role as a real step in their career.

What you’ll do

• Run the floor alongside the General Manager across the restaurant, terrace, Cantina and Cinco, and lead shifts on your own
• Own reservations, groups, private hire and events, from the first enquiry to a great night
• Build and manage the rota, keeping a close eye on labour and the guest experience at the same time
• Lead, coach and motivate a team of around 25, and help bring new people on board
• Help create the systems we’re building: checklists, standards, training and clear reporting
• Look after the numbers with the GM: sales, labour, margins and targets
• Keep compliance tight: health and safety, licensing, allergens and cash handling
• Bring ideas. If you see a better way of doing something, we want to hear it

About you

• You’ve worked as an Assistant Manager, Supervisor or similar in a busy restaurant or bar, and you’re ready for the next step
• You love hospitality and you lead from the floor, staying calm and friendly when it’s busy
• You’re organised and comfortable with systems (we use SevenRooms, Deputy and Square; experience with similar tools is a plus)
• You’re curious about the numbers and want to understand what makes a venue successful
• You’re driven, you take ownership and you want to keep learning
• A love of Mexican food, agave and cocktails is a big bonus
