Job Description:
About Jimmy Garcia Restaurants
On the banks of the Thames, on Queen’s Walk opposite Skate Space, Fire & Fromage by Jimmy occupies one of the best riverside spots in central London. Run by Jimmy Garcia, whose BBQ Club has traded on this site since 2015, it has quickly become a Southbank favourite. This summer our guests enjoyed a relaxed, contemporary setting with Somerset House opposite and the National Theatre and Southbank Centre behind, with fresh food, vibrant cocktails and friendly, prompt service.
This winter we’re bringing that same energy back, and we’re building a team to match.
Our bar and floor teams set the tone. Whether guests are stopping by for a drink or settling in for the evening, we want every visit to feel effortless, and we take that seriously.
The Role:
We are recruiting an Assistant General Manager to join our management team at our Southbank pop-up, Fire & Fromage by Jimmy, on Queen’s Walk.
You will be part of the Pop-ups branch of the business, helping to deliver a unique restaurant and bar experience that is a far cry from traditional restaurant operations. We’re looking for an enthusiastic, hands-on leader with proven experience in high-volume service, a proactive attitude and a love of hospitality.
The role involves working across the whole site: alongside the kitchen team, leading and training the floor and bar teams, and maximising revenue across the bars, restaurant, outdoor areas and event spaces every day.
If you work well in a team, you can expect flexible working, competitive benefits, rewards, excellent training and great career prospects.

- Punctuality & professionalism is non-negotiable. As a manager you set the standard for the whole team. Reliable timekeeping and leading by example are critical, and we will check this through references..
- Previous management experience is required. You must have proven experience in a high-volume restaurant or bar, ideally as an AGM. This is not a first management role.
Key Responsibilities:
· Managing customers and staff across multiple sales areas, with a hands-on approach during service.
· Training, motivating and developing the team, and holding them to our standards on punctuality and service.
· Assisting with inducting and running the rota for the front-of-house team & bar team.
· Maintaining high levels of cleanliness and standards throughout the business.
· Ensuring full compliance with health and safety, food hygiene and licensing requirements.
· Opening and closing the venue, including stock and ordering.
· Duty managing the venue.
What We’re Looking For:
- 2–4 years’ experience working in a high-volume restaurant or bar, ideally as an AGM or equivalent.
- Experience duty managing large venues and managing multiple areas within a venue.
- An understanding of the current London pop-up and restaurant scene.
- Excellent people skills, with the ability to talk confidently to guests, clients and staff.
- A proactive, self-starting attitude with lots of initiative.
- A strong track record of reliability and punctuality, backed up by references.
- Full availability for Christmas and New Year’s Eve.
- A Personal Licence (desirable).
- The right to work in the UK.
What We Offer:
– Staff food on shift.
